It's not everyday flights to Greece are on sale, so when fares dip below $400 round-trip, you book. That time is now. Norwegian is currently offering nonstop flights from New York (JFK) to Athens (ATH) from $367, as reported by Running with Miles.

Remember that Norwegian is a budget carrier so you'll have to pay for a checked bag and to select your seat. However, this is similar to other full-service carriers' transatlantic basic economy fares that impose the same ancillary fees. If you plan on paying extra for those services, it could make sense booking a LowFare+ fare outright, which also includes free meals.
